Greg's Zucchini Spread
- mix together 1.1kg of grated zucchini & 0.6kg of chopped onion
- sprinkle with 3 tblspn of salt
- leave to stand overnight (or at least a few hours)
- strain off liquid & wash well with cold water
- add 2 1/2 cups vinegar, 1 chopped red pepper, 1tspn of tumeric & 4 cups of sugar to a pan and bring to the boil
- when boiling add the mixed vegies & bring back to the boil
- allow to cook 4 to 5 mins only
- mix 3 tblspn of cornflour with vinegar mix & bring back to the boil
- pour into freshly sterilized bottles
- enjoy!

Chilli Jam
500g chillies500g red capsicums roughly chopped
5 cups sugar
1/2 cup wine vinegar
Juice of one lemon.
Wear gloves chillies burn....
Remove the stalks from the chillies and zoom with the capsicums in a food processor till mushed.
Place in heavy based pan with all other ingredients and bring to the boil stirring occasionally until slightly darkened and thickened. I think this took about 3/4 hour.
Bottle into sterilised jars and seal immediately.
